KNITTING Q: How do I convert sock pattern stitches to regular back & forth knitting?

I know this may seem like an obvious question, but I've never tried it before. Do I just rewrite every OTHER row totally backwards & substitute K for P and vice-versa?

Not quite.

Remember that the legs of socks are knit tubular, therefore curling at the edges is not an issue. If you're knitting flat pieces, you have to take the edges into consideration. For a scarf, you'd probably want to knit the first 3 to 5 rows in garter stitch and then start each row with 3 to 5 Knit Stitches, which would provide a garter-stitch border. Or your scarf may look better with seed stitch, moss stitch, ribbing, or some other combination of knit and purl stitches that will make the edges lie flat.

Then, to put the pattern within the border, you are correct: If the pattern is written out row by row, you'd need to reverse the even-numbered rows (purl the knit stitches, knit the purl stitches, basically). If you're working a Stitch Pattern that involves lace, cabling, or some other surface pattern or intarsia or stranding, you'll be better off to use a chart. Usually these days charts are provided even if narrative instructions are provided as well. If not, you can find free knitters graph paper on the Internet (for example, at Lucia's "knitting fiend" site: http://www.thedietdiary.com/knittingfiend/KnittersGraph.html )
